Storage Conditions: Dry and cool (68- 72ºF, 20- 22ºC)
Ingredients: Glucose syrup, sugar water, acacia gum, flavorings, coloring: tartrazine, patent blue V.
Additional Notes: Stir well before each use. Protect from light and heat.
Applications: Used to flavor gelato, ice cream, cakes, mousse, fillings, and semifreddo.
Directions: Dosage: 40-50 g/ each kg of gelato base 40-50 g/ each kg for pastry products Mix this paste into the other ingredients and allow to stand for 10-15 minutes, then proceed. Best used in addition to fresh or frozen fruit.
