    Storage Conditions: 

     Dry and cool (68- 72ºF, 20- 22ºC)

    Ingredients:  

    High methylester apple pectin standardized with dextrose

    Additional Notes:  

    Slow set, spreadable gel texture. Dextrose content is variable, 25-45%. The dextrose is derived from wheat and is GMO free.
     

    Applications: 

    As a gelifier for pates des fruits and glazes.

    Directions: 

    Ready to use. For pate de fruit, typically combined with sugar BEFORE being added to the mass. Requires the presence of an acid to set properly.

    Ingredients:  Low methylester, amidated pectin derived from citrus fruits and standardized with calcium citrate, polyphosphate and dextrose

    CT1013 is a low methyloxyl pectin derived from citrus fruits.
