Maltitol is a corn derived sugar alcohol that is commonly used as a sugar substitute in a diabetic food industry. Uses include: confectionary, baked goods, ice cream, beverages, dairy, sauces and dressing. Maltitol is 90% as sweet as sugar and will not brown or caramelize like sucrose. It is a emulsifier, stabilizer and sweetener.
